I don’t have huge amounts of good luck with hardboiled eggs (I pretty much always get the green stuff and the clinging shell, which is annoying even though harmless), and I don’t like watching the stove. So I tried the whole “bake eggs in a muffin tin” thing (350 degrees F for 25-30 minutes, depending on egg size, then put them in ice-cold water just like a hardboiled egg).
It works. And they look good.
The one thing is that, since you’re baking the eggs, you can also burn the egg. So mine had a few burned spots on the whites.
The other thing is that you will get little brown or yellow spots on the eggshell exterior. These wash off in cold water, unless they’re directly above a spot where your eggwhite burned.
I also figured out that tortilla holders are great for keeping hardboiled eggs in your refrigerator.
