Globe Trekker had a show set in Lebanon, where the lady spent a HUGE amount of time with Lebanese cooks. Now I know how to make those little Lebanese triangle spinach pies!
There was also a fair amount of sightseeing, Lebanese wine, and tons more, but the food was the most important….
A lot of Lebanese-Americans use things like biscuit dough. The dough used for this on the show was thinner (and olive oiled), but you could probably cut it into round shapes with a glass like a biscuit. But a fairly large glass, because you have to fold over lobes of the circle to make a triangle dumpling shape around the filling. A round, sharpish cookie cutter would probably also work.
Anyway, you can put any kind of filling into the dumpling (cheese fillings are good), so knowing about the dough recipe and seeing it made on the TV show was very helpful.
